Summer Sunshine In A Cup

If you know me or follow me on Instagram, you will often see me post my morning drink – Hot water with Lemon. This is how I start my day every morning with a burst of brightness – color and aroma – plus it is a great way to hydrate and detox the body. However, with the warmers days rolling in, sometimes I want to have my sunshine in a cup but I want something cold and refreshing.

Ask and you shall receive! The other day, I saw someone post a morning mocktail recipe that looked too good not to try, and lo and behold, my Sunshine In A Cup got a bit of an upgrade. It is delicious and perfect for bright summer mornings!

Recipe:

  • 1 Lemon, whole
  • 3 cups of Filtered Water
  • 2 tbsp of Olive Oil (the good stuff)
  • 2 tbsp of Honey
  • 1 small chunk of Ginger, peeled
  • 1 dash of Cinnamon

Instructions:

  1. Wash the lemon then cut into 8 segments. (cut in half, then cut that half in half, then cut that half in half. Repeat to the other half.) Remove the seeds from the lemon segments.
  2. Add the lemons, water, ginger, honey, and cinnamon in a blender.
  3. Blend until smooth. (I used the Beast Blender, which blended for about 90 seconds).
  4. Pour the mixture through a strainer or cheesecloth, so you only have the liquid and not any rind or ginger. (You may have to pour it through a few times.)
  5. Enjoy a cup then store the rest in a mason jar to enjoy for the next two mornings!

Pro Tip: The leftover rind and ginger pulp makes a great hand or face scrub that smells amazing, and is super moisturizing.
